Bunny Cake


I was not raised in a religious home. I remember going to Sunday school a few times as a child but church was not in any way a regular event. Nor were the religious holidays focused on religion.

However, my mom loved holidays; every one of them. It was a reason to have a party and a big meal. She would put out decorations for Washington and Lincoln’s birthday (this was before the all-inclusive President’s Day). Halloween led to Thanksgiving and the day after turkey day up went the Christmas Tree. Luckily, Valentine’s Day would see the demise of the Christmas Tree. Easter, May Day (my birthday so she would break out the May Baskets), 4th of July and then start over again.

Easter, although a bit more low key on decorations, had Easter baskets all around. Also mom always made a bunny cake for Easter dinner dessert. Really very easy to make. Make a 9” round cake and a batch of cupcakes. Cut the round in half and set them together up on edge, use frosting to stick a cupcake on for a head, frost the whole thing, add coconut to it and stick a marshmallow for the tail and jelly beans for the eyes and nose. Make some paper ears and there you go. Bunny cake.

I recently found a recipe for a bit more elaborate cake. It involves two round cakes and well images are better than words:

Start with the cake, I made poppy seed.


Cut the cake up and begin assembling.

Get it all frosted.
Finish with decorations.

I have gained more spirituality in my old age and attended a wonderful Easter service at the Presbyterian Church in Cottage Grove, Oregon. My boyfriend’s sister is the minister and gave a wonderful talk about the resurrection and a great explanation on why Easter bunnies can lay chocolate eggs. We then had a feast with grilled leg of lamb, potatoes dauphinois, roasted vegetables and bunny cake.
